The perfectly roasted veggies and the creamy garlic sauce is really what makes this the perfect vegetarian sandwich! I love to serve it on a ciabatta loaf or ciabatta buns but you can really use any type of bread you have.
The beauty in this recipe is that you can cook the veggies and toast your bread all while the garlic is roasting. It takes a little bit of time but it might be the best vegetarian sandwich you'll ever make.
Vegetarian Ciabatta Sandwich Ingredients
These are the main ingredients and substitutions you can make in this sandwich. The beauty with sandwiches is that you can really change them up however you see fit. The blend of the variety of flavors is really what makes this sandwich extra delicious.
- Garlic Mayo: Roast your garlic in the oven to get that mellow, roasted garlic flavor. This does take some extra time, but believe me, it's worth it! You then mix the garlic with some mayo for a deliciously creamy sauce. If you want to make it easier you can just use some garlic mayo or substitute it for some homemade hummus to get that creaminess.
- Roasted Veggies: All the veggies are thinly sliced and roasted together. i use a mix of red peppers, onion, sliced green zucchini, and portobello mushrooms. You can use a yellow or red onion.
- Mozzarella: I love adding fresh mozzarella cheese to this sandwich because it melts beautifully. It helps hold everything in the sandwich and it gives it a delicious creamy flavor. If you want more cheese you could even add a little bit of parmesan cheese on top.
- Arugula: Some fresh greens adds a nice bright touch to this rich sandwich. I love adding a handful of arugula but spinach or romaine would work as well.
- Ciabatta: I love using crusty ciabatta bread and slicing it into pieces. You can also use a ciabatta roll or bun for mini versions of the sandwich. A crusty bread like a baguette would work. Or a few slices of bread like sourdough or whole grain would work as well.
Feel free to top the sandwich with other items you might have. Add a drizzle of balsamic vinegar or some fresh black pepper to add extra flavor. You could even add some extra veggies like marinated artichoke hearts or fresh herbs to make it a unique sandwich.
How to Make a Roasted Garlic Sauce
To make the roasted garlic sauce you want to roast the garlic bulb whole and then squeeze out the cloves. To do this, cut off the top of the bulb. Place the bulb, cut side up, on a sheet of aluminum foil. Drizzle with a little bit of olive oil and then wrap the foil around the bulb.
Place it in the oven to roast for 40 minutes or until the bulb is soft. You can place this directly on the oven rack.
When you take it out, let it cool slightly and the squeeze out the garlic by pinching the bulb. Mix the garlic with the mayo and lemon juice.
What to Serve with a Ciabatta Sandwich

How to make this sandwich easier
- Don’t want to roasted the garlic? Just add some garlic powder to your mayo and lemon juice instead.
- Don’t have all the veggies? Feel free to replace them or omit the ones you don’t like. You could also use eggplant, asparagus, or tomatoes.
- Can’t find ciabatta? You can serve this on any type of bread. It will also do great on a sourdough.
- Want less dishes? Toss everything together on the baking sheet instead of using a bowl.
