I’m always looking for fun new vegetarian sandwiches to make, and this spinach and feta grilled cheese does not disappoint.

Spinach and feta are such a perfect combination. The feta brings a salty and creamy flavor to the humble spinach.

You can keep this sandwich very simple or amp it up with extra toppings or more cheese.

Tips for the Best Spinach and Feta Sandwich

  • Use block feta cheese. You can buy feta in crumbles or in blocks. If you can, buy your feta in block form. The blocks don’t have any extra coating, so they blend in with the spinach better than the crumbles. Crumbled feta will still work if that is all you can find.
  • Use good sourdough bread. Get a nice loaf of sourdough bread for these sandwiches if you can find it. Having a nice loaf of bread really makes a difference. You could also use a french or country bread in this recipe.
  • Add in extra veggies for a burst of flavor. If you want to load up the sandwich, you can add in extra veggies like sun-dried tomatoes, green onions, or roasted red peppers.
  • Preheat your griddle or skillet before toasting your sandwich. Heat up your pan before adding the sandwich to get a nice golden-brown crust. I love using a griddle or even a cast iron skillet to get a nice toast.

What to Serve with Spinach and Feta Grilled Cheese

You can serve this grilled cheese as a delicious lunch on its own or make it a larger meal for dinner. If you want to add an extra side with your grilled cheese, you can make some sweet potato fries, roasted tomato soup, or black bean soup.

Can I use frozen spinach?

You can use frozen spinach! It might take a little bit longer to break down and heat through, but you can use it in the same way. Once the spinach is heated through on the stove, you can add the feta.

How do I make it more cheesy?

If you want this to be a more cheesy grilled cheese feel free to add in a few slices of provolone or some shredded mozzarella cheese.

Can I use a panini press?

Absolutely! If you have a panini press, you should definitely use it in this recipe. Just make the sandwich as is, and in step 3, use your press instead of a skillet or griddle.

How many sandwiches does this recipe make?

This recipe makes one large sandwich. I am using a pretty large sourdough loaf. If you are just using regular sandwich bread you could maybe stretch this to 2 sandwiches.

Ingredients

  • 1 tbsp olive oil
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • 4oz fresh spinach (about 4 cups, packed)
  • 4oz feta (about 1 cup)
  • salt and black pepper
  • crushed red pepper flakes, optional
  • 2 large slices of sourdough
  • butter, for toasting

Directions

  1. Heat the oil in a nonstick skillet over medium heat. Add shallots and garlic and cook for 2-3 minutes or until shallots are softened. Add in the spinach and mix until it is wilted.
  2. Now add half of the feta and mix in with the spinach. You want to heat it until it is melting slightly into the spinach mixture. (Feta won’t melt all the way but it will start to soften quite a bit.) Season with a pinch of salt and pepper. Add a shake of crushed red pepper if you want a little spice. Taste and adjust the mixture as needed.
  3. Butter one side of each piece of bread. To the non-buttered side, add the spinach mixture and top with the other half of feta cheese. Add the other slice of bread on top. Add the sandwich to a hot skillet or griddle with the butter sides out and grill each side until golden brown.
