Quick weeknight pasta recipe with lentils tomato sauce and spinach.
This recipe comes together really quickly. The goat cheese tomato sauce is really the star of the recipe. All you need to do is heat the tomato sauce and add in the goat cheese to melt and mix together. This give you a creamy delicious sauce to add to your pasta.
In this recipe I add in lentils to add some protein to the sauce. You can easily skip this step if you don’t like or don’t have lentils. I also add in spinach to wilt down, but you can add other veggies if you’d prefer.
What tomato sauce to use?
I like using arrabiata sauce because it has a little bit of a kick to it. The Rao’s arrabiata sauce is my absolute favorite jarred tomato sauce. With that being said, you can really use any type of tomato sauce that you like.
What type of lentils to use?
I use red lentils in this recipe. They are very quick to cook and they are so thin that they add a great texture to the sauce. You could use other lentils, but they take much longer to cook.
What types of pasta should I use?
I love this sauce with penne or fusilli, but I have made it with spaghetti and that works great as well.
If you are gluten free, feel free to use any other type of pasta with this dish. Brown rice pasta works great.
Can I add other veggies?
Absolutely! I use spinach because it is quick and wilts into the sauce. You could also roast some broccoli or asparagus to add.
Fresh herbs are also a great way to add some freshness to the dish.
