My new favorite way to enjoy buffalo cauliflower is in a buffalo cauliflower wrap. Once you make the cauliflower it is a super simple meal to put together.

The beauty of a wrap is that you can add all different things to make it your own. This recipe uses lettuce, avocado, and ranch but you can add additional veggies if you choose.

The Best Buffalo Sauce to Use

There are so many buffalo sauces to choose from. I like something classic like Franks Buffalo Sauce or just the store-brand buffalo sauce like this 365 one from Whole Foods. If you prefer more spice you can also find extra spicy buffalo sauce. You really can’t go wrong with your choice. Just make sure to choose one based on your spicy tolerance.

Common Questions

Can I add in extra protein?

Absolutely! This recipe isn’t super protein-heavy so if you want to add in extra I would suggest adding in a can of chickpeas. After the cauliflower is cooked add the chickpeas to the mix and toss all of it together with the buffalo sauce.

You could also add the chickpeas to the oven for the last 15 minutes to get them crispy before tossing them with the sauce.

Can this recipe be vegan?

Yes, this recipe can be vegan! When making the cauliflower batter, use unsweetened plant-based milk. For the sauce, you can use a vegan ranch dressing or any other vegan dressing substitute.

Can this recipe be gluten-free?

I have not tried a gluten-free version of this recipe. Theoretically, you could use gluten-free flour and gluten-free tortillas. If you give it a try let me know how it turns out!

Ingredients

Cauliflower

  • 1 medium head of cauliflower (about 5 cups), cut into florets
  • 1 cup all purpose flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup Buffalo sauce

Wraps

  • 4 tortillas or pitas
  • 1/2 red onion, sliced
  • 3 cups romaine lettuce, chopped
  • 2 avocados, sliced
  • 1/4 cup ranch (homemade or store-bought)

Directions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, combine the spices, salt, and the flour. Whisk in the milk until combined. The mixture will be fairly thick. Add the cauliflower florets to the batter. Toss until each piece is nicely coated in the flour mixture.
  3. Place the coated cauliflower on the prepared baking sheet. Spread out the cauliflower so there is space between pieces. This helps each piece cook evenly.
  4. Place in the oven and bake for 25 minutes and then flip the cauliflower pieces over. Place back in the oven for another 15-20 minutes.
  5. While the cauliflower is baking, prep your veggies. Cut your onion, romaine, and avocado.
  6. When the cauliflower is done, add the baked florets to a large bowl. Add in the buffalo sauce and toss.
  7. Now assemble the wraps. Add your avocado slices and romaine. Then add in the buffalo cauliflower. Top with sliced onion and ranch. Roll up your wrap and enjoy!
