Cobb salads are one of my favorite summer salads. They are bright with flavor but also have a rich creamy element that makes them the perfect salad for a meal.
This cobb salad has all the classic toppings with the addition of juicy blueberries to add a wonderful pop of flavor and color to the meal.
What Makes a Cobb Salad
The main elements that make for a great cobb salad are the greens, blue cheese, hard boiled eggs, and bacon. There are other elements that you will also find, but these are the main pieces to every great cobb salad.
Salad Variations
- Mix up the greens. I have made this with mixed greens or romaine and both worked great. you can really use any type of greens you would like. Spinach or arugula would also work great. I just wouldn’t use anything like kale or cabbage that is too tough.
- Use tempeh bacon or regular bacon. To keep this a vegetarian salad I like to use tempeh bacon. I like the Lightlife tempeh bacon. You could also use regular bacon if you prefer.
- Add in cherry tomatoes. For an extra pop of bright acidity you can add in some halved cherry tomatoes.
- Use any dressing. This recipe include a creamy ranch dressing recipe that I love to use. You could also use a dijon mustard vinaigrette, or a simple olive oil vinaigrette.
- Brighten up the flavor with fresh herbs. I suggest adding in some fresh basil to the salad, but you could also add in fresh chives, parsley, or mint instead. The addition of fresh herbs really add to the salad.
Blueberry Cobb Salad Dressing
Ranch dressing is a common dressing used on cobb salad. I think it works great here. There is a recipe if you want to make your own, but you could also use store bought dressing or make a different one that you prefer.
Other dressing that work great are blue cheese dressing or a dijon vinagarette.
How to Serve this Berry Cobb Salad
You can serve this as a main course or as a side to a meal. If you are serving it as a main meal it serves 2-3 people well. As a side dish it serves 4-6 people.
This has some protein in it with the hard boiled eggs and tempeh bacon. You will often see cobb salads with grilled chicken. You could add that it you want it to be a little more hearty. If you wanted to keep it vegetarian you could even top it with some crispy chickpeas for added protein.
This blueberry cobb salad also makes for a great side dish to any meal. It is a great one to pair with veggie burgers for a summer grill out.
