How to make super green pasta?
First, you want to make your kale pesto. This can be made in advance if you would like. I use the Sigsbee Street Kale Pesto Recipe. You can also use any other pesto you have on hand. Next, you want to bake your broccoli and cook your pasta. These should take about the same amount of time. While you pasta in cooking throw your veggies in the oven.
Can I use other vegetables?
Absolutely. You can swap out the broccoli for other vegetables such as asparagus or cauliflower. You can even add in multiple vegetables to make a blend. Mushroom, onions, and tomatoes are always great additions to this pasta recipe.
Is this recipe vegan?
It can be! Just make sure the kale pest you use is vegan. Here is my favorite vegan kale pesto recipe. You can add parmesan or use a non vegan pesto if you would prefer.
Can this recipe be gluten free?
Yes! Just make sure to use a gluten free pasta such as a brown rice pasta and the recipe will be gluten free.
