We have all probably had the classic spinach artichoke dip, but this is a spin on the classic and it has a delicious flavor and texture you and your family will love.

This kale artichoke dip is a great dip recipe to bring to parties or to have as an appetizer. It makes a good amount for a group of 4 but if you are making it for a crowd, I would try doubling it.

The whole recipe comes together right on the stovetop so it is a very easy dip recipe to make!

How to Serve Kale and Artichoke Dip

You can serve this creamy dip hot or cold. I prefer it hot but it works both ways. When it is warm it is much easier to use as a dip. When it is cold you might want to serve it with a knife or spoon because it is more like a spread.

Serve this kale artichoke dip alongside some crackers, pita chips, bagel chips, tortilla chips, or some baguette slices. You could also serve it with some fresh veggies like celery or red peppers if you want to keep it healthier. If you want to get extra fancy you could even serve it in a bread bowl.

How to Store Kale and Artichoke Dip

If you don’t enjoy the dip right away you can easily store it for later. Keep the dip in an airtight container in the fridge for 4-5 days. You can reheat it on the stove or enjoy it cold.

Delicious Tip: If you have leftover dip, add the artichoke dip to your grilled cheese sandwiches to give it an extra deliciously cheesy garlic flavor.

What Type of Kale to Use

You should be able to use any type of kale but I prefer curly kale if you can find it. Typically one bunch of kale is enough for this recipe.

Tips for Making the Best Dip

  • Chop up your kale finely. You want to be able to easily dip your bread or chips and having large chunks of kale make it much harder to eat. Before adding the kale to the pan make sure to chop it up nicely and remove any tough stems.
  • Remember to taste and adjust. Depending on the ingredients you use the flavor can always taste a little different so make sure to taste. Add more salt, pepper, or cheese as needed.
  • Make it ahead of time. This dip is a great one to make ahead of time if you are prepping for a family gathering or a game day. It stores well in the fridge and can easily be reheated the next day.

Ingredients

  • 5 oz kale (about 5 large leaves), de-stemmed and chopped
  • 1/4 cup water
  • 1 tbsp olive oil
  • 3 garlic cloves, finely grated
  • 1 (15 oz) can artichoke hearts, drained, chopped
  • 1/2 tsp kosher salt
  • 8 oz cream cheese, cubed
  • 1/2 cup (1 oz) parmesan cheese, grated
  • freshly ground black pepper

Directions

  1. To a pot over medium-low heat, add the chopped kale and 1/4 cup water. Cook until kale has softened and slightly wilted and water has evaporated, about 5-7 minutes.
  2. Push the kale to the side of the pan and add the olive oil and garlic to the bottom of the pan and cook for 1 minute then mix all together.
  3. Add in the artichokes, salt, cream cheese, parmesan, and pepper. Mix until the cheese is nicely melted and everything is incorporated. Taste and adjust as needed.
  4. Transfer the dip to a bowl and serve with bread, crackers, or chips.
