These easy to make banana cinnamon pancakes are a perfect weekend or weekday breakfast that your family will love. They are fluffy pancakes that have flavors reminiscent of a soft and light banana bread.
This recipe makes about 8-12 pancakes depending on the size you make. I think this serves 4 people well, but about 3 if you’re really hungry. Feel free to double the recipe to make enough for a crowd.
Tips for making the fluffiest banana pancakes
- Don’t over mix your batter. Once you add the dry ingredients to the batter, mix just enough for the flour to fold into the wet ingredients. If you over mix it this can cause tough or rubbery pancakes.
- Use ripe or overripe banana. The more ripe you banana the sweeter it is, so try to use a slightly brown banana if you can. This also makes it easier to mash up into the pancakes. If you want pieces of the banana you can even use a lightly mashed banana to keep some small chunks of banana in the pancakes.
- Adjust the heat while cooking. You may have noticed that the first few pancakes you make take awhile and the last few cook really fast. This is due to the temperature of your skillet. I like to try and heat up the griddle or skillet for a few minutes before starting. Then when you get closer to the end of your batter, turn it down to medium-low heat so the last ones don’t burn.

For toppings, serve these pancakes with maple syrup and some extra banana slices. I also love to serve these banana pancakes with some chopped nuts like walnuts or pecans. You could even add a little peanut butter is you wanted something extra decadent.

How to store leftover pancakes
If you have extra pancakes you can actually store them in the freezer. Just place your pancakes between pieces of parchment paper and place in a freezer storage bag. To reheat, place the pancakes on a plate and microwave until warmed through.
They won’t be as good as fresh but they are still a delicious and quick breakfast for later in the week. Try to enjoy them within a month of adding them to the freezer.
Can these pancakes be made vegan?
Yes, these can be made vegan! You just have to make a few swaps. Make a flax egg mixture instead of the egg. To do this mix 2 tbsp of ground flaxseed with 5 tbsp of water and let it sit for 3-5 minutes. Beyond that, use a plant based milk and swap out the butter for vegetable oil.
