Cobbler is one of my favorite desserts to make because it is so easy to put together and is still so delicious! This blueberry lemon cobbler is made with very simple ingredients and the combination of blueberries and lemon is the best part.

I love to serve this blueberry lemon cobbler with a scoop of vanilla ice cream or a little bit of whipped cream.

Tips For Making Blueberry Cobbler

This is such an easy blueberry cobbler recipe but to make sure it is as easy and delicious as expecting, here are a few tips.

  • Mix the blueberries in the pan. To save on dishes, just mix your blueberries with the sugar and lemon right in the pan you are going to bake them in.
  • Crumble the topping with your hands. To get those nice chunks of topping, use your hands to place the topping over the blueberries.
  • Top the cobbler with coarse sugar. To add a little extra crunch to the top of the blueberry mixture I love to sprinkle some turbinado sugar or coarse cane sugar on top. This is optional but adds a nice touch.
  • Adjust the lemon flavor. The combination of lemon and blueberries is a classic flavor. If you want the lemon flavor to be lighter you can skip the fresh lemon juice. If you want more lemon feel free to add a little extra lemon zest.

What Blueberries To Use in a Cobbler

You can use fresh blueberries or frozen blueberries in this recipe. Since they break down so much, both work really well. If using frozen you might need to adjust the baking time. It can take a little bit longer than if you are using fresh.

I love making this during blueberry season but since you can use frozen berries you can make it any time of year.

How to store blueberry cobbler?

If you have leftover cobbler, store it in an airtight container in the fridge for up to 3 days. When you are ready to have it, just reheat it in the microwave. You can also enjoy this lemon blueberry cobbler cold.

Ingredients

Blueberry Filling

  • 4 cups blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • juice from 1/2 lemon (about 1 tbsp)
  • zest from 1/2 lemon (about 2 tsp)

Cobbler Topping

  • 1 + 1/2 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 6 tbsp butter, melted
  • 1/4 cup milk (regular or plant-based)

Optional

Directions

  1. Preheat oven to 350°F. Grease a 9x9 baking dish.
  2. To the baking dish, add all of your blueberry filling ingredients (berries, sugar, lemon juice, and lemon zest) and mix together so the berries are nicely coated in the sugar and zest.
  3. In a large bowl mix together the cobbler topping ingredients (flour, sugar, baking powder, salt, melted butter, and milk) until a thick dough forms. Sprinkle the topping over the top of the blueberries. You can add some turbinado sugar on top if you want a little extra crunch and sweetness.
  4. Add the baking dish to the preheated oven and bake for 35-40 minutes or until the berries are bubbling and the top is golden brown.
  5. Let it cool slightly then serve the warm cobbler with vanilla ice cream or whipped cream.
