Whether you are making a large salad for dinner or a small salad for a side, this vegan caesar dressing is a great go-to dressing to use. It has a cashew and sunflower seed base so you don’t have to use as much oil as traditional caesar dressings.

How to use the vegan caesar dressing?

I typically use it on romaine lettuce with some croutons and some extra nuts and seeds. You could also add it to some chopped up kale or brussels sprouts. You could even use this as a sauce base in a veggie wrap.

How to make vegan caesar dressing?

To make this recipe, I start by soaking the cashews and sunflower seeds for at least 20 minutes. Since this is such a short time, I typically use hot water. This will soften the nuts a little bit to make it easier to blend.

After the nuts have soaked, drain them and place them in a blender or food processor. Blend the nuts so they start to become creamy, about 1 minute. Then add in all of the other ingredients and blend until desired consistency.

Ingredients

  • 1/3 cup (50g) sunflower seeds
  • 1/2 cup (50g) cashews
  • 1 clove of garlic
  • 1 tbsp dijon mustard
  • Juice from 1/2 lemon
  • 3/4 cup water

Directions

  1. Soak seeds and nuts for about 20-30 min on hot water.
  2. Drain nuts and seeds and add to a blender. Blend for about 30 sec to a 1 minute, until it starts to become a paste.
  3. Add in all remain ingredients and blend until creamy, about 1 more minute. Add in additional water if you want to thin it out.
  4. Use with your favorite salad and serve!
