What is Kale?
Kale is a leafy cruciferous vegetable that is part of the brassica family. Many people think of it as a lettuce but it is actually in the family with broccoli and Brussels sprouts.
There are many types of kale such as tuscan kale, lacinato kale, or purple kale. They are all good for you and can be used interchangeably most of the time.
How to Use Kale
Since kale is a leafy vegetable you can use it in salads. When using it in a salad, make sure to chop it up small and even let it sit in the dressing for 10-15 minutes to soften the leaves. Since kale is tougher than other lettuces it benefits from soaking up some dressing.
You can also saute kale to add it to pasta, veggie bowls, or stir fries.
