I try to buy a container of spinach every week to try and get through. Sometimes it succeeds and other times in fails. If I ever have too much, I reach for a few key recipes that I know will help me use it up.
What is spinach and why should you eat it?
Spinach is a leafy green that is actually part of the amaranth family (along with beets and quinoa).
Spinach is a low calories vegetable but it is very high if fiber, vitamins, and minerals. Some of them including Vitamin A, K1, Folic Acid, Iron, and Calcium. The antioxidants in spinach may also improve eye health.
Can you preserve spinach?
My favorite way to preserve spinach is to cook it and freeze it. This saves space in the freezer and makes it easy to use in future recipes. There are other methods such and drying/dehydrating but I don’t seem to get much use out of those methods.
Here is how to freeze preserve spinach:
- Add spinach to a pot of boiling water and cook for 2 minutes.
- Remove spinach with a slotted spoon and place in a bowl of cold water to cool.
- Squeeze out excess moisture, add it to a freezer bag, and place in the freezer.
How to eat more spinach?
The easiest way to eat more spinach it to wilt it down into a meal. Spinach shrinks drastically when cooked. Add it to a pasta recipe or throw a handful into a soup. Once it is wilted you’ll barely even know it’s there.
Another thing you can do with fresh spinach is add it into your smoothies. Once it is broken down it blends with the flavor of the smoothie. Make sure to pair it with something sweet like strawberries.
