Pinch of Yum
This is a very popular food website so you may have already heard of it. I think I have enjoyed every single recipe I have made on this blog. Even though they do have meat recipes, their veggie recipes are amazing and there is such a good selection. Some of my favorites are: Shrimp Tacos, Spicy Peanut Tofu Bowls, and Instant Pot Wild Rice Soup.
Minimalist Baker
If you are in the mood for something healthier, this is the place to look. Minimalist baker has mostly vegan recipes and they always focus on adding in healthy ingredients. I have learned so much from this blog. She has different ways to substitute ingredients and really emphasizes how different sauces can highlight the dish. Some of my favorite recipes from Minimalist Baker are: Easy Vegan Falafel, Creamy Vegetable Risotto, and 1 Pot Black Bean Soup.

There is always something new on Half Baked Harvest. The recipe combinations are unique and I love the variety. This isn’t a pescatarian recipe site but she has so many recipes that you can easily find whatever you are looking for. Some of my favorites are: Better than take out Kung Pao Cauliflower, Kale Caesar Salad with Sweet Potatoes and Crispy Chickpeas, and Herbed Garlic Butter Scallops with Lemony Feta Dressing.

This blog is a fully vegetarian blog with amazing classic recipes you will want to make over and over again. I love these recipes because I feel like they are all accessible and you can easily find all of the ingredients. Everytime I make the recipes from Cookie and Kate, everyone loves it! Some of my favorite recipes are the Vegetarian Stuffed Peppers, the Black Bean Enchiladas, and the Veggie Burgers.
